Gluten Free Pancakes

After some trial and error I have finally came up with the perfect combination of wholesome ingredients to create these delicious, super moist gluten free pancakes. They are high in protein, and do not contain dairy, gluten, or added sugars. In my opinion they actually taste much better than regular pancakes!

Ingredients:

2 ripe bananas
1/2 c gluten-free flour (I used quinoa flour)
3 eggs
2 scoops protein powder (I used Sunwarrior)
Dash of Celtic sea salt

Directions:

In a bowl, mesh banana with a fork. Add eggs, flour, protein powder & salt and mix until smooth. If the consistency gets too thick, you can add some almond milk. Cook pancakes using coconut oil for 1-2 minutes on each side, or until golden.
